Winemaker: Like so many other Slovenian wineries, Edi Simcic is also a family estate. The founder, from whom the winery takes its name, still oversees things, but his son Aleks has since taken the lead in the vineyard. The passion for winemaking has been handed down from father to son, and they understand the art of ageing wine on wood like no other. The winery, which is located in the Goriska Brda wine region, was recently expanded with a new state-of-the-art cellar and tasting area.
Type: Dry red · 80% merlot, 10% cabernet sauvignon and 10% cabernet franc · 13% alcohol
Vinification: Maceration (contact with the skins) for 14 days, 24 to 30 months ageing in wooden barrels (1/3 new barrels).
Tasting notes: Medium-bodied wine with aromas of red cherry, blackberry and spice (including white pepper). Nicely balanced wine with acidity to support the tannins.
Food pairing: Pair with pork or beef dishes.
