Winemaker: Like so many other Slovenian wineries, Edi Simcic is also a family estate. The founder, from whom the winery takes its name, still oversees things, but his son Aleks has since taken the lead in the vineyard. The passion for winemaking has been handed down from father to son, and they understand the art of ageing wine on wood like no other. The winery, which is located in the Goriska Brda wine region, was recently expanded with a new state-of-the-art cellar and tasting area.
Type: Dry white · 100% chardonnay · 13.5% alcohol
Vinification: Wine from a single vineyard at a higher altitude, with a shallow upper layer of soil and a rocky bed beneath it that lends the wine its distinctive minerality. After pressing, the wine is aged 18 months, 11 of which in oak barrels (25% new barrels). This wine has an ageing potential of up to 10 years.
Tasting notes: The first thing you notice about this wine is its subtle chardonnay nose, with a discreet hint of spice and minerality. A full-bodied wine with buttery notes and balanced acidity.
Food pairing: Great with tuna or swordfish.
