Winemaker: Like so many other Slovenian wineries, Edi Simcic is also a family estate. The founder, from whom the winery takes its name, still oversees things, but his son Aleks has since taken the lead in the vineyard. The passion for winemaking has been handed down from father to son, and they understand the art of ageing wine on wood like no other. The winery, which is located in the Goriska Brda wine region, was recently expanded with a new state-of-the-art cellar and tasting area.
Type: Dry white · 100% rebula · 12.5% alcohol
Vinification: Aged for 18 months, of which 11 months in barriques (15 to 20% new barrels).
Tasting notes: With selection and proper maturation, the rebula grape, which in itself is not very aromatic, reveals its power and beauty. The aromas on the nose blend youthful radiance with maturity. Discreet roasted notes and aromas of yellow fruit. Mineral and salty notes in the mouth, a result of the soil of Goriska Brda. After 3 to 4 years tertiary aromas develop, making the wine even better and more complete. A powerful wine with a long finish and good ageing potential.
Food pairing: Best combined with fish and starters that are not too flavourful, creamier pasta dishes, mushrooms and white meat (e.g. farm chicken).
