Winemaker: Like so many other Slovenian wineries, Edi Simcic is also a family estate. The founder, from whom the winery takes its name, still oversees things, but his son Aleks has since taken the lead in the vineyard. The passion for winemaking has been handed down from father to son, and they understand the art of ageing wine on wood like no other. The winery, which is located in the Goriska Brda wine region, was recently expanded with a new state-of-the-art cellar and tasting area.
Type: Dry white · equal parts of chardonnay, sauvignon blanc and rebula · 13.5% alcohol
Vinification: Aged for 18 months, of which 11 months in barriques (25% new barrels). This wine has an ageing potential of up to 10 years.
Tasting notes: The chardonnay and sauvignon blanc make for a powerful and concentrated wine, while the rebula adds elegance. The latter (local) grape makes the wine accessible, adding minerality to create a richer and more complex ensemble. A sumptuous bouquet with soft, ripe yellow fruit, minerality, spice and wood notes. In the mouth, Triton Lex is full and rich with notes of tannins as a result of maceration (contact with the skins).
Food pairing: This big wine pairs well with many dishes, for example rich fish dishes (possibly with a creamy sauce), as well as with more refined veal or lamb dishes. The kind of wine that can accompany a meal from start to end.
