Location: Ajdovscina, Vipava Valley, Primorska
Winemaker: This recently founded winery is managed by Zmagoslav Petric, who is assisted by cellar master Martin Gruzovin. They primarily work with local grape varieties, using biodynamic methods, both in the vineyard and in the cellar. They carefully select the sites where the vineyards are located. The soil consists of a mix of sand, sandstone, marl, limestone and clay, lending their wines their distinctive mineral notes.
Type: Dry white · 100% zelen (= Slovenian for ‘green’) · 11% alcohol
Vinification: Spontaneous fermentation without added yeasts, followed by spontaneous malolactic fermentation. Sur lie ageing for 9 months in stainless steel tanks. Bottled according to the Maria Thun biodynamic calendar.
Tasting notes: Pale yellow wine, with aromas of citrus, peach, grapefruit and dried flowers. A wine that strikes a nice balance between freshness and roundness.
Food pairing: Good as a pre-dinner drink, but also pairs nicely with light starters or smoked fish (e.g. eel, mackerel, etc.)
