Description
Winery: Ronk
Date of establishment: 1987
Location: Vipolze- Dobrovo, Goriska brda, Primorska
Winemaker: The Ronk winery was founded by the Kristancic family. Although they had been growing grapes for many years, they only decided to start producing their own wines in 1987. Ronk thinks of wine as a product that is the result of all the love and care that is given to the vines. Once the grapes have been harvested, vinification evolves at its own pace, with a minimum of intervention. Their vineyards are situated in Slovenia, barring a few that are on the other side of the border, in the Italian region of Collio.
Type: Dry white · 100% sauvignon blanc · 13.5% alcohol
Vinification: The wine is macerated (contact with the skins) for 36 hours, followed by fermentation in stainless steel tanks, after which it is stored for 10 months in oak casks. It spends 10 months ageing in the bottle.
Tasting notes: A rich golden-yellow wine. Aromas of vanilla, yellow fruit, elderflower and hints of honey. A medium-bodied wine with elegant freshness and a buttery finish. This wine becomes more elegant with time.
Food pairing: Can be served with fish dishes, white meat, pasta dishes with tomatoes, young or semi-matured cheeses (in particular goat cheese) and prosciutto.
