Not just any white wine
What shall we drink? In spring, the answer is rather quickly: a white wine. Whereby we assume a little too quickly that only the color matters. A waste of all that goodness with character, thinks Simonne Wellekens, who is happy to tip our Edi Simcic Triton Lex 2015 as one of her 9 favorites.

In recent years, Slovenia has made a qualitative leap forward. Dry white wines, rich in minerals and with their own style, are impressing. In southwestern Slovenia, the vineyards lean toward Italy’s Friuli-Venezia Giulia, known for its crisp pinot grigio wines. The climate is Mediterranean with influences from the Adriatic Sea. The Edi Simcic family estate vineyard is located in Goriska Brda, where the soil is rich in salts and minerals. The wine with eleven months of barrel aging is a harmonious blend of chardonnay, sauvignon blanc and the local rebula grape. The straw yellow wine has a full and deep aroma, containing both fresh and ripe notes: pear, yellow fruit, spices and flowers. Full, powerful and complex in the mouth, in addition fresh and accessible. The tender taste with hints of umami, juicy fruit, the good acids, the hints of wood aging with butter, bread crumbs, nuts and spices, deliver a wine with a penetrating finish.
