Location: Ajdovscina, Vipava Valley, Primorska
Winemaker: This recently founded winery is managed by Zmagoslav Petric, who is assisted by cellar master Martin Gruzovin. They primarily work with local grape varieties, using biodynamic methods, both in the vineyard and in the cellar. They carefully select the sites where the vineyards are located. The soil consists of a mix of sand, sandstone, marl, limestone and clay, lending their wines their distinctive mineral notes.
Type: Dry red · 80% merlot and 20% barbera · 14% alcohol
Vinification: The wine is first macerated (contact with the skins) for 4 weeks, followed by spontaneous fermentation through natural yeasts, after which it spends 2 years ageing in barriques. Bottled according to the Maria Thun biodynamic calendar.
Tasting notes: Ruby-red wine with full, accessible aromas of ripe blackberry, plum, graphite, roasted coffee and brushwood. A lovely, full-bodied yet fresh wine with a long finish.
Food pairing: Pairs beautifully with red and grilled meat, roasts, and rich pasta dishes.
