Description
Winery: Guerila (biodynamic, vegan)
Date of establishment: 2005
Location: Ajdovscina, Vipava Valley, Primorska
Winemaker: This recently founded winery is managed by Zmagoslav Petric, who is assisted by cellar master Martin Gruzovin. They primarily work with local grape varieties, using biodynamic methods, both in the vineyard and in the cellar. They carefully select the sites where the vineyards are located. The soil consists of a mix of sand, sandstone, marl, limestone and clay, lending their wines their distinctive mineral notes.
Type: Dry white · 100% pinela · 12% alcohol
Vinification: The wine is first macerated (contact with the skins) for 6 hours, then pressed. Spontaneous fermentation with natural yeasts followed by spontaneous malolactic conversion. Nine months ageing sur lie in stainless steel tanks. Bottled according to the Maria Thun biodynamic calendar.
Tasting notes: Pale yellow wine, with aromas of citrus, peach, grapefruit and dried flowers. A wine that strikes a nice balance between freshness and roundness.
Food pairing: A nice wine for pre-dinner drinks or to accompany a light starter.
