Location: Ajdovscina, Vipava Valley, Primorska
Winemaker: This recently founded winery is managed by Zmagoslav Petric, who is assisted by cellar master Martin Gruzovin. They primarily work with local grape varieties, using biodynamic methods, both in the vineyard and in the cellar. They carefully select the sites where the vineyards are located. The soil consists of a mix of sand, sandstone, marl, limestone and clay, lending their wines their distinctive mineral notes.
Type: Dry orange · 100% rebula · 12% alcohol
Vinification: Manually harvested grapes with a rigorous selection in the vineyard. The crushed grapes are macerated (contact with the skins) for 45 days. Spontaneous fermentation through native yeasts. The wine is then pressed and aged for 2 years in old oak barrels. Bottled according to the Maria Thun biodynamic calendar, without filtering and minimal use of sulfites.
Tasting notes: The wine has a deep amber yellow colour. The complex and rich nose has aromas of dried flowers, herbs, dried fruit, honey and a hint of balsamic vinegar. The powerful structure means this is a wine with ageing potential. A rich, full-bodied, mineral and elegant wine.
Food pairing: Can be served with creamy veal or pork dishes as well as with cheese (especially mature cheese).
