Winemaker: This young winery is led by Zmagoslav Petric, assisted by cellar master Martin Gruzovin. They choose mainly local pigeon breeds and adopt a biodynamic way of working, both in the vineyard and in the cellar. The sites where the vineyards are located are carefully chosen. The soil is a mixture of sand, sandstone, marl, limestone and clay. This provides the typical mineral notes of their wines.
Wine type: Dry orange – 100% rebula – 12% alcohol
Vinification: Manually harvested grapes with careful selection in the vineyard. The crushed grapes are macerated (skin contact) for 45 days. Spontaneous fermentation with yeasts present. Then pressing and 2 years of aging the wine in old oak barrels. Bottled according to the Maria Thun lunar calendar, with no filtering and minimal addition of sulfite.
Tasting profile: The wine has a deep amber color. The nose is complex and rich, with aromas of dried flowers, herbs, dried fruit, honey and a touch of balsamic. The powerful structure makes this a wine with storage potential. A rich, full-bodied, mineral and elegant wine.
Food pairing: Can be poured with rich veal and pork preparations as well as cheeses (especially aged cheeses).
