Winemaker: This recently founded winery is managed by Zmagoslav Petric, who is assisted by cellar master Martin Gruzovin. They primarily work with local grape varieties, using biodynamic methods, both in the vineyard and in the cellar. They carefully select the sites where the vineyards are located. The soil consists of a mix of sand, sandstone, marl, limestone and clay, lending their wines their distinctive mineral notes.
Type: Rosé · 80% (or more) merlot & remaining percentage cabernet sauvignon · 14% alcohol
Vinification: Manual harvesting of the grapes, followed by maceration (contact with the skins) of the crushed grapes for 4 hours and then pressing. Spontaneous fermentation through wild, native yeasts and spontaneous malolactic fermentation. The wine spends nine months ageing on yeast lees (sur lie). Bottled according to the Maria Thun biodynamic calendar, without filtering and minimal use of sulfites.
Tasting notes: A bright, cherry red wine. Strawberry, cherry and blackcurrant on the nose. A remarkably fruity, fresh and very drinkable wine.
Food pairing: A delicious option for pre-dinner drinks. Can also be served with vegetables, fish or a summer BBQ.
