Location: Ajdovscina, Vipava Valley, Primorska
Winemaker: This recently founded winery is managed by Zmagoslav Petric, who is assisted by cellar master Martin Gruzovin. They primarily work with local grape varieties, using biodynamic methods, both in the vineyard and in the cellar. They carefully select the sites where the vineyards are located. The soil consists of a mix of sand, sandstone, marl, limestone and clay, lending their wines their distinctive mineral notes.
Type: Dry orange · rebula, zelen, pinela and malvazija · 13% alcohol
Vinification: The different grape varieties are manually harvested at the same time, then crushed, after which they are macerated (contact with the skins) for 7 days. Spontaneous fermentation with own yeasts. Gentle pressing and 1 year ageing in large old oak barrels, with malolactic conversion. The wine continues to ferment sur lie for the entire year. Bottled without filtering and with minimal use of sulfites.
Tasting notes: A bright golden wine with a complex aroma of dried flowers, chamomile, herbs, dried fruit and honey. A harmonious, elegant wine, that has a nice structure and a lot of fresh minerality.
Food pairing: Pairs nicely with white meat, mushrooms (also in pasta dishes) and some softer cheeses.
