Soil: calcareous marl
Harvest: manual harvest in late September – early October
Vinification: spontaneous fermentation, 10 months maturation in large wooden barrels, 4 months on inox, unfiltered
Description: aromas of ripe lemon yellow stone fruit and pineapple, flint, chamomile and hay, full mouthfeel, slightly spicy, tight acids and long finish
Technical information: alcohol 13.5% , acidity 7.6gr/l, no addition of SO2, serve at 10-12°
Food pairing: fish, poultry and hot starters, can also be served for several courses
