Description
Winery: Guerila (biodynamic, vegan)
Established: 2005
Location: Ajdovščina, Vipava Valley, Primorska Region
Winemaker: This young winery is run by Zmagoslav Petric, assisted by cellar master Martin Gruzovin. They primarily choose local grape varieties and apply a biodynamic approach both in the vineyard and in the cellar. The locations of the vineyards have been carefully selected. The soil consists of a mix of sand, sandstone, marl, limestone, and clay. This results in the characteristic mineral notes of their wines.
Wine type: Sparkling white, méthode traditionnelle – Rebula, Zelen, and Pinela – 12% alcohol
Vinification: Short maceration (skin contact) and pressing, with spontaneous fermentation and malolactic conversion. This is followed by a second fermentation in the bottle with the addition of frozen must. Aging in the bottle for 36 months on the lees (sur lattes). No addition of sulfites or liqueur d’expédition during disgorgement.
Tasting profile: Golden yellow sparkling wine with green reflections. Delicate, intense bubbles. Aromas of citrus, peach, Mediterranean herbs, bread crust and a green finish. A fresh, elegant and mineral sparkle.
Food pairing: Suitable as an aperitif or with light starters.
