Location: Ajdovscina, Vipava Valley, Primorska Region
Winemaker: This young winery is run by Zmagoslav Petric, assisted by cellar master Martin Gruzovin. They primarily choose local grape varieties and apply a biodynamic approach both in the vineyard and in the cellar. The locations of the vineyards have been carefully selected. The soil consists of a mix of sand, sandstone, marl, limestone, and clay. This results in the characteristic mineral notes of their wines.
Wine type: Dry orange – rebula, zelen, pinela and malvazija – 13% alcohol
Vinification: The different grapes are manually harvested at the same time, then crushed and then macerated (skin contact) for 7 days. Spontaneous fermentation with proprietary yeasts. Mild pressing and 1 year aging in large old oak barrels, with malolactic transformation. The wine remains on its yeasts sur lie all year. Bottled without filtering and with minimal addition of sulfite.
Tasting Profile: The wine has a bright golden color and a complex aroma of dried flowers, chamomile, spices, dried fruit and honey. It is a harmonious wine, elegant, with nice structure and high mineral freshness.
Food pairing: Ideal with white meats, mushrooms (whether or not incorporated into a pasta) and some softer cheeses.
