Description
Appellation: Vipava Valley, Primorska.
Grape varieties: a blend of 4 local grape varieties: Rebula, Zelen, Pinela and Malvazija.
Tasting notes: bright golden orange wine, made from a blend of 4 local grape varieties, with aromas of dried flowers, chamomile, herbs, dried fruit and honey. Complex and structured, with pronounced mineral freshness.
Food pairing: white meat, mushrooms, mushroom pasta and softer cheeses.
Harvest: the 4 local grape varieties are hand-harvested at the same time.
Vinification: the 4 local grape varieties are crushed together and undergo 7 days of maceration, followed by spontaneous fermentation with native yeasts and gentle pressing. The wine is then aged sur lie for 1 year in large old oak barrels, with malolactic fermentation. Bottled unfiltered with minimal added sulfites.
Technical information: alcohol 13%, dry, biodynamic and vegan.
