Winemaker: This winery, which is run by Borut Blazic, is situated in the far west corner of Slovenia, on the border with Italy. Tucked away between the mountains and the sea, the winery has all it takes to grow top-notch grapes. Most of the Blazic vineyards are situated in Slovenia, barring a small number of vineyards across the border, in Italy. All Blazic wines are produced according to the KOPOP method, an organic farming programme with support from the Slovenian authorities. This means that the grapes are grown with the greatest respect for nature. No pesticides or fertilisers are used and the grapes are harvested manually.

Type: Dry orange · 100% rebula · 13% alcohol

Vinification: After macerating (contact with the skins) for 7 days, natural fermentation occurs without added yeasts or temperature control. Maturation for 4 years in used 500-litre oak barrels.

Tasting notes: This wine (from 2011, which was an exceptional year) is made from grapes from selected parcels. It has a deep amber colour. The nose is very complex, rich and varied with notes of dried apricot, dried flowers and herbs. The acidity and tannins are nicely balanced, with a long mineral finish. A beautiful wine with good potential for ageing.

Food pairing: This wine comes into its own in combination with strong flavours, e.g. mature crumbly cheeses and cheeses with a pronounced taste. Also goes well with meat dishes, legumes, whole-wheat pasta, polenta, mushrooms and pronounced tropical spices (nutmeg, cinnamon, cloves and cardamom).
