Winemaker: Like so many other Slovenian wineries, Edi Simcic is also a family estate. The founder, from whom the winery takes its name, still oversees things, but his son Aleks has since taken the lead in the vineyard. The passion for winemaking has been handed down from father to son, and they understand the art of ageing wine on wood like no other. The winery, which is located in the Goriska Brda wine region, was recently expanded with a new state-of-the-art cellar and tasting area.
Type: Dry white · 100% sauvignonasse (tocai friulano) · 12% alcohol
Vinification: Pressing, fermentation and then 10 months ageing in French barriques (20% new wood). This wine has an ageing potential of 6 to 8 years.
Tasting notes: This deep yellow wine reveals an intense bouquet of flavours: lots of fruit such as citrus and white peach, minerality and floral notes. Dry in the mouth with a lovely acidity, it is a balanced wine with a mild almond aroma in the finish.
Food pairing: Delicious with white meat, shellfish, pasta alle vongole, risotto or pasta with fresh herbs and vegetables.
