Description
Winery: Guerila (biodynamic, vegan)
Established: 2005
Location: Ajdovscina, Vipava Valley, Primorska Region
Winemaker: This young winery is run by Zmagoslav Petric, assisted by cellar master Martin Gruzovin. They primarily choose local grape varieties and apply a biodynamic approach both in the vineyard and in the cellar. The locations of the vineyards have been carefully selected. The soil consists of a mix of sand, sandstone, marl, limestone, and clay. This results in the characteristic mineral notes of their wines.
Wine type: Dry white – 100% pinela – 12% alcohol
Vinification: First 6 hours of maceration (skin contact), then pressing, spontaneous fermentation with natural yeasts and then spontaneous malolactic transformation. Nine months aging sur lie on inox barrel. Bottling according to the Maria Thun lunar calendar.
Tasting profile: Pale yellow wine, with aromas of citrus, peach, grapefruit, and dried flowers. A wine with a nice balance of freshness and roundness.
Food pairing: Suitable as an aperitif wine or with light appetizers.
