Harvest: hand-harvested, mid-September
Vinification: 24 hours of cold maceration, fermentation in stainless steel with initial temperature control. Aging sur lie until January, followed by bottling.
Tasting notes: floral opening, ripe fruit notes with aromas of yellow stone fruit, lightly spiced, soft caramel nuances, a mineral touch on the finish and a fresh, clean ending.
Technical information: alcohol 12.5%, total acidity 5.18 g/L, serving temperature 8–10°C
Food pairing: light starters, also pairs well with Asian cuisine.
